Simply saying guilt free and cake in the same sentence seems wrong, but it can be done! Last night was a cold one here in Indy, the snowflakes were flying and the wind was howling. Of course this always makes my husband and I crave comfort food, especially sweet, rich treats like cake. This recipe is fantastic because it kills the craving for cake or brownies while filling you up with good for you ingredients!
Guilt Free Cake
- 1 Cup dried walnuts
- 1 Cup dried pecans
- 1 Cup dried apricots ( You could also use dried dates if you would prefer)
- 2 Eggs
- 1 Cup shredded unsweetened coconut
- 1 Tsp cinnamon
- 1 Tbsp vanilla
- 1/4 Tsp salt
- 1 Cup semi-sweet chocolate chips (optional)
- Fresh fruit of your choice (optional)
Using a food processor, pulse the apricots, walnuts and pecans until course.
Add the eggs, vanilla, cinnamon, coconut and salt to the food processor. Pulse until the mixture just starts to pull away from the edge of the bowl and form a ball in the center.
Press the mixture into a greased 8X8 baking pan. Bake for 30 min at 350 degrees. Cool before serving.
To make a chocolate sauce, simply melt the chocolate chips in a microwave safe dish in the microwave for 30 seconds. Stir, then melt for 30 more seconds. Drizzle the chocolate on the cakes and top with fresh fruit.
