I am in a bit of a dilemma here. I don't know whether to say this is a healthy dessert post or a post featuring a fantastic afternoon pick me up. I guess I will have to say this little pumpkin treat is both! The pumpkin spice flavor just bursts out of these fluffy little bites! When I mixed this batch up I wasn't sure how using an oat flour would translate into the final product. What happened was a smooth and creamy consistency that has the exact texture of pumpkin pie.
Pumpkin Pie Protein Bites
1 cup rolled oats or oat flour (what I used for the bites in my pic was oat flour)
1/2 cup coconut or almond flour
1 cup pumpkin puree
1/2 cup peanut butter
1 tsp pumpkin pie spice
1 tsp vanilla extract
2 tbsp honey or pure maple syrup
1/4 to 1/2 cup cashew milk or coconut milk
In a large bowl, mix together the oat flour, coconut flour and pumpkin pie spice.
In a microwave safe medium bowl, combine pumpkin, peanut butter, vanilla extract and honey. Microwave for 1 minute and stir to combine. Add wet mixture to the dry mixture and stir until all ingredients are combined. Shape into bite sized balls and place in an airtight container. Refrigerate for 30 mins until firm. These will keep in the fridge for up to 5 days!
