Indiana got a taste of spring last week with our first above 70 degree day and the warm sunshine had me dreaming of backyard barbecues and delicious grilled foods. As I started to pull out my favorite spring/summer recipes I ran across one of the very first recipes I ever created, my teriyaki marinade. This marinade works with every kind of meat and veggie and anything else you can think of! 

I used this marinade in class this week and it was a huge hit! I used it on my grilled chicken, veggies and it even worked nicely with the home style fries on the bottom of the plate!  It kept my chicken moist, the veggies flavorful and the potatoes soaked up it's sweet and spicy flavor.

As an added perk, you can throw some of this marinade in a small saucepan and slowly simmer it until it is thick and syrupy to make a lovely sauce to drizzle over veggies or your meat!

Teriyaki Marinade 


  • 1/2 cup low sodium soy sauce 
  • 1/4 cup apple cider vinegar
  • 2 tbs honey or brown sugar
  • 2 tbs minced shallots 
  • 1 tbs vegetable oil
  • 2 garlic cloves, minced 
  • 1/2 tsp fresh ginger, minced 
  • 1/8 tsp pepper
  • pinch of red chili flakes 


Mix all ingredients together. Marinade your meat in this mixture in a bowl for 30 mins to 1 hour. Marinade vegetables for 15 to 20 mins. Reserve some of the marinade to brush on the meat and veggies while they cook to keep them moist.
