Overnight Oats

I know that overnight oats isn’t a new concept, in fact I am joining the party pretty late in the game. Healthy eating gurus have been praising the taste and simplicity of overnight oats for awhile now.  I had avoided jumping into this new territory because honestly, it sounded gross. Cold soggy oats to start your morning? No thanks, I’ll stick with my hot oatmeal!

However, I have always tried to not dismiss a new food before I have given it a fair shake so I decided to give overnight oats a try. It was super fast and easy to make the night before, it took maybe 5 minutes and smelled amazing and looked pretty (bonus points!!). The next morning, I loaded my oats up with strawberries, honey and blueberries and dove in ( let it be known that I also had a bowl of hot oatmeal ready to go, just in case). To my massive surprise, it was delicious! Creamy, subtly sweet and refreshing, this breakfast blew me away. The oats were not soggy and the milk and yogurt combined to create a scrumptious smooth texture. This breakfast was also incredibly filling and kept me full all morning. 

I am now a huge fan of this grab and go breakfast and will be making these overnight oats frequently this spring and summer! 

Here is the recipe I created, I found it to be a great intro into the world of overnight oats! Enjoy!  

Overnight Oats 

Ingredients 

  • 1 cup rolled oats 
  • 1 cup cashew milk or milk of your choice 
  • 1/2 cup greek yogurt or applesauce 
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tbsp chia seeds 
  • honey to taste 

Instructions 

Place all ingredients in container of your choice (I used a canning jar). Shake to combine. Refrigerate overnight. Stir well before eating and top with your favorite fruit, honey or shredded coconut.
