What a quarter! This past quarter will go down as the most exhausting, most fun and the quarter where I really feel I elevated my skills. I finally have a small break for a week before my next and final quarter starts. I seriously can’t believe that I only have three months left at school before I graduate. Eeek!
This past quarter I learned allot about Asian, American regional and Latin cuisine and my most favorite class of all time, nutrition!!!! In Asian cuisine I learned the art of the wok, and how much I really really hate fish sauce (no matter how much you wash your hands, you smell like fish for hours). In American regional I learned how to smoke and pan fry salmon like a boss and what makes each region in the US unique. In Latin class, I ate so many tortillas and discovered the many amazing and delicious nuances that can be found in Latin culture. And then there was nutrition, the most amazingly fun and educational class I have ever taken. I learned all about healthy cooking techniques, ways to add flavor without adding calories and how to cook for a healthy balanced lifestyle. We also expanded on how food interacts with your body and how to cook for certain dietary restrictions (like high blood pressure, diabetes etc.).
Next quarter I am taking garde manger, a la carte and world cuisine. In a nutshell this means that in garde manger I will be learning about cold dishes (such as salads, hors d'œuvres, appetizers, canapés, pâtés and terrines). A la carte is where the students run an actual restaurant on the eleventh floor of the Art Institute and gain real world restaurant experience. In world cuisine, I will be learning all about well, world cuisine!
