I really can't believe I am doing a class update for my final quarter. When did that happen? My time at school has definitely flown! For my final quarter, one of the classes I am the most excited about is called A La Carte. This class is a student run dining lab where the students actually run the restaurant. The restaurant is called Eleven (it's on the eleventh floor of the pyramids) and is open for lunch on Thursday and Friday. It's a culmination of all of the skills learned at school.
What also makes it pretty cool is that the diners can look into the kitchen via a camera and the giant glass window looking into the kitchen and see what we are doing. This quarter we are cooking a Puerto Rican themed menu and have some amazing dishes. I had never had a tostone before this class but now I am seriously addicted! If you haven't had the experience of eating one of these addicting chips, a tostone is basically a double fried smashed slice of plantain. We serve it with a special dipping sauce ( aka house made ketchup and mayo)...sooooo gooood. We also have a slow roasted pork shoulder with a garlic orange sauce, spicy gazpacho soup and so many other delicious things! The class is really intense, it's three full days and we prep food on Wednesday and then open for business Thursday and Friday.
