A little sweet and a little spicy, that's the best way to describe the most versatile salsa I have ever made. Brian would also be quick to point out that those two phrases describe me as well! Maybe that's why this little number and I get along so well. This salsa can be used as a dip, a topping, a garnish to a salad,heck it can even be blended into an amazing sauce!
Ripe sweet mango, punchy jalapeno and juicy pineapple blend with red onion to form a blend of flavors that will leave everyone at your table saying mmmmmmm! My favorite way to use this salsa is with fish. Serve it with brown rice, a veggie and some avocado for a creamy counterpart and you have a fast weeknight dinner!
Pineapple, Mango and Jalapeno Salsa
1 Mango, diced
1 cup pineapple, diced
1 Jalapeno, diced
1 Cucumber, diced
1/2 Red Onion, diced
Lime juice as needed
Salt and pepper to taste
Mix all ingredients together, season with lime juice and salt and pepper to taste. Use as a topping, sauce,dip or whatever else you can think of!!!
