Halloween Treat! Brown Rice Cereal Bars

Leaves are falling, cool rainy days are here to stay and Halloween is just around the corner!! What yummy treats and goodies will you be making for Halloween?? Pumpkin bars, caramel apples and chocolate are definitely where my brain goes when I think about at the usual goodie suspects. I also remember that when I was a kid my family would make rice crispy treats and decorate them with candy corn and sprinkles!!! However, we had a hard time getting to the decorating step as we kids would eat most of the marshmallows before we could even make the bars (sorry mom!!)! This got me wondering if I couldn’t make a slightly healthier version of my childhood classic. 

After having some fun in the kitchen, I put together my brown rice cereal bar! This tasty treat is made with brown rice cereal, marshmallows, cranberries and sunflower seeds. One thing I hate about a normal marshmallow cereal bar, is that they are so sweet and have no texture so I added cranberries and sunflower seeds to incorporate a salty/sweet crunch. Honestly I will love these all year round as an afternoon treat or for dessert when I want something slightly sweet/salty! 

To jazz these guys up for Halloween, I decorated them with icing to make them more of a special treat and of course for that spooky Halloween feel. You can go crazy with how you want to decorate these bars; think of them as a delicious crispy canvas! :) 


Brown Rice Cereal Bar

Makes 12 bars


  • 1 10oz bag marshmallows
  • 6 cups crisp brown rice cereal (I like the Whole Foods 365 brand)
  • 2 tablespoons butter
  • 2 tablespoons coconut oil, plus more for greasing pan
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/4 cup sunflower seeds
  • 1/4 cup dried cranberries,chopped 
  • Decorating icing and toppings (chocolate chips, sprinkles etc..)


Grease a 9 x13 pan with coconut oil and set aside. In a large bowl, mix together cereal, sunflower seeds, cinnamon and cranberries. Set aside.

In a large microwave safe bowl, combine marshmallows, butter and coconut oil and microwave at 30 second intervals, stirring occasionally until marshmallows are melted. Stir vanilla into marshmallow mixture. 

Pour marshmallow mixture into bowl with the cereal and stir until thoroughly combined. Firmly press cereal mixture into greased pan and set aside to cool. Once cool, cut into bars and decorate!!
