Life doesn’t get much better than when I have a fresh out of the oven piece of banana bread on my plate. Sadly, this also involves lots of butter and sugar, until now! These banana bites taste exactly like banana bread, but with a healthy twist. I love to make a batch of these for the week and eat them as a dessert or after a particularly rough session at the gym. It’s just an added bonus that these little bites take less than 30 minutes to make!

Banana Bread Bites
Makes 12 bites
2 ripe bananas
1 cup rolled oats
1 cup unsweetened coconut flakes
1/4 cup chopped walnuts or pecans
2 tablespoons mini chocolate chips
1 teaspoon cinnamon
1 teaspoon vanilla
Pinch of salt
Preheat oven to 350 degrees. Mix all dry ingredients as well as vanilla in a large bowl. In a separate bowl, smash bananas with a fork until a paste forms. Mix bananas into oat mixture until well combined. Using a tablespoon, form balls and place on a baking sheet covered with parchment paper, baking mat or coated with a non stick cooking spray. Bake for 15 mins until firm. Cool and store in the fridge.
