Bacon and Feta Sweet Potato Salad


I love sweet potatoes, they have amazing flavor and texture and are so versatile. From dinner to dessert there isn't much that a sweet potato can't do! Because I eat them so much, I'm always on the lookout for a new way to add flavor to my sweet potato game. 

I created this bacon and feta sweet potato salad to use with my meal prep as a side for my proteins for lunch or dinner. Bacon, pecans, cranberries and feta all come together to create a delicious sweet and salty flavor profile that is deeply satisfying! I swear that this salad gets better the longer it sits in your fridge. With just a handful of ingredients you can whip up a delicious and filling side salad that goes perfectly with any protein you can think of!  


Bacon and Feta Sweet Potato Salad

Makes 4 servings


  • 3 large sweet potatoes, peeled and diced 
  • 2 tablespoons olive oil
  • 12 ounces (about 10 strips) bacon, cooked crisp and chopped
  • 1/2 cup dried cranberries
  • 1/2 cup feta cheese
  • 1/4 cup chopped pecans
  • 1 tablespoon chopped flat-leaf parsley
  • 2 tablespoons reduced balsamic vinegar


Preheat oven to 400 degrees, line a baking sheet with foil. Toss the sweet potatoes with olive oil and spread onto prepared baking sheet. Roast for about 20 minutes, or until tender; allow to cool slightly.

In a large bowl, add the roasted sweet potatoes, chopped bacon, cranberries, feta, pecans, parsley and vinegar. Stir to combine.
