I can’t believe it’s already September!! The mornings and evenings are getting cooler and darker and it seems that pumpkins are popping up everywhere!!
I’m still holding on to summer with this spicy and sweet blackberry salsa. It’s my favorite way to spice up my meal prepped meals. Spoon this spicy, juicy and sweet salsa over the top of your meal prepped chicken, steak, pork or fish for an instant flavor reboot!
Enjoy this simple yet intensely flavorful salsa!
Makes 1 heaping cup
1 small carton fresh blackberries washed
1 red bell pepper, diced
1/2 jalapeno pepper, diced
1/3 cup yellow onion, diced
1 tomato, diced
2 tablespoons fresh cilantro, chopped
Drizzle of lime juice
Salt to taste
In a large bowl, mix together all ingredients! Eat with pita chips or spoon over your meal prepped meals!
