If I had to list one ingredient that instantly adds a yum factor to salads, it would be apples! Sweet and tart with a fabulous crunch, it makes any salad fun and helps beat the midweek meal prep blues!
I like to use a blend of sweet and tart apples, typically a Honeycrisp and Granny Smith blend. I dice them up into bite sized pieces and pair it with my favorite greens, dried cranberries, pistachios and Swiss cheese.
Apples add so much flavor that I find myself able to skip a salad dressing. I love that apples provide this added bonus as then I don’t have to worry about adding extra calories to my salad!
Apples would also pair well with walnuts, pecans and almonds! For cheese try cheddar or feta.
If you will be meal prepping this salad and you’re worried about the apples browning, toss the diced apples with 1 tablespoon lemon juice before adding to the salad. You can skip this step if you don’t mind slightly brown apples.

Apple Pistachio Salad
Makes 4 servings
8 cups spinach or greens of your choice
1 Honeycrisp apple, diced
1 Granny Smith apple, diced
1/3 cup pistachios
1/3 cup dried cranberries
1 cup Swiss cheese, cubed
Toss all ingredients in a large bowl. Portion into meal prep containers or divide between four plates. Can top with chicken, salmon or your favorite protein if desired.
