PERFECT Sweet Potato Fries

A crunchy sweet potato fry is like a unicorn, you know they exist, but you can’t seem to find one!!

Most of the time, I see sweet potato fries that are soggy, wimpy or mushy…ewww. It felt gross just typing that!

What we want is a fry that you bite into and it goes CRUNCH on the outside with a light fluffy inside. Perfect for dunking into a big ole bowl of ketchup or BBQ sauce!

I’m here today to tell you that crunchy sweet potato fries DO EXIST!!! They just take a bit of time and care! Use my tips below to make yourself a batch of the crispiest, crunchiest and tastiest fries you’ve ever eaten!

Here’s how to do it!!

Fresh and Balanced

Tip 1. Cut the fries as close to the same size as possible. Soak fries in a bowl of cold water for 30 minutes to one hour

Tip 2. Drain and dry the fries well. Toss with 2 tablespoons cornstarch per four sweet potatoes.

Tip 3. Use parchment paper on your sheet tray and don’t crowd the sheet pan. Leave lots of space or your fries will steam and not get crisp!

Tip 4. Flip the fries halfway through and switch the pans top to bottom in the oven.

I’m not sure this recipe could have fewer ingredients or take less time to make. In just five minutes, you can create an insanely filling and delicious snack! It’s perfect for meal prep snacks or fueling long Pinterest sessions searching for other pumpkin spice recipes :)!

And with fall officially walking through the door, it’s time to embrace the pumpkin spice! These bites are packed with oats, chia seeds, protein powder and PUMPKIN!! The pumpkin puree adds a wonderful moisture to the bites so they are not dry at all!

These taste like pumpkin pie rolled into one bite! And if you’re a fan of energy bites, try my almond chocolate chip bites or my cashew coconut fudge bites,

To get the perfect sized bite, use a cookie dough baller or a tablespoon. Scoop, roll into a perfect ball and into an airtight container they go! These will save for 5 days in the fridge.

Pumpkin Spice Bites

Makes 12 bites

Ingredients

  • 1 cup rolled oats

  • 4 tablespoons cashew or almond butter

  • 3 tablespoons pumpkin puree

  • 2 tablespoons chia seeds

  • 2 scoops vanilla protein powder

  • 1 teaspoon pumpkin pie spice

Instructions

Add all ingredients to a large bowl and stir to combine. Scoop with a cookie dough baller or tablespoon and roll into balls. Store in an airtight container in the fridge for up to five days.

Brownie Batter Bites

Allow me to introduce you to the most decadent energy bite I have ever made! Chocolate packed brownie batter bites are my favorite way to recharge after a workout or crush a persistent sweet tooth! 

The base of this bite is an old Whole30 chocolate cake recipe I had tinkered with back in October. The cake failed miserably, but removing a few ingredients made a fudgy delicious energy bite!! 

The process to make these is super simple. Stir, roll and refrigerate! I like to roll my bites in mini m&m's for fun, but crushed walnuts, coconut flakes or crushed graham crackers make excellent coatings as well! 

Be sure to keep these refrigerated as they don't hold up well to heat!

Brownie Batter Bites

Makes 6-8 bites

Ingredients

  • 1 cup cashews 
  • 2 tablespoons melted coconut oil 
  • 2 tablespoons cashew butter 
  • 1 teaspoon vanilla extract 
  • 1/3 cup cocoa powder 
  • 1 cup dates, pitted and soaked in hot water for 5 minutes
  • Water as needed to thin mixture
  • Mini m&m’s to coat 

Instructions

Add cashews to food processor and pulse until nuts are a super fine crumble. Add coconut oil (measure after you melt), cashew butter and cocoa powder and blend to combine. Add dates and blend until mixture is thick. Add water to thin if necessary. Use a tablespoon to portion and roll into balls. Roll in desired toppings and refrigerate. 

 

Berry Beautiful Skin Smoothie

Who doesn't love a smoothie that tastes great and makes your skin radiant!? This berry smoothie is packed full of ingredients to make your skin gloooowwww! It's got vitamin C to brighten, coconut water to hydrate and spinach to help you eat your veggies :). 

This icy berry blast is also the perfect porch smoothie for the summer. Cold and refreshing, it helps keep the heat at bay on muggy summer nights.

Berry Beautiful Skin Smoothie

Makes 1 smoothie

Ingredients

  • 1/2 cup coconut water 
  • 1 cup frozen mixed blueberries, raspberries and strawberries
  • 1/4 cup spinach 
  • 1 teaspoon honey 
  • 2 teaspoons flaxseeds 

Instructions

Add all ingredients to a blender starting with the coconut water and blend on high until smooth. Add more coconut water to adjust the consistency to your liking.
