Five Minute Pumpkin Spice Bites

I’m not sure this recipe could have fewer ingredients or take less time to make. In just five minutes, you can create an insanely filling and delicious snack! It’s perfect for meal prep snacks or fueling long Pinterest sessions searching for other pumpkin spice recipes :)!

And with fall officially walking through the door, it’s time to embrace the pumpkin spice! These bites are packed with oats, chia seeds, protein powder and PUMPKIN!! The pumpkin puree adds a wonderful moisture to the bites so they are not dry at all!

These taste like pumpkin pie rolled into one bite! And if you’re a fan of energy bites, try my almond chocolate chip bites or my cashew coconut fudge bites,

To get the perfect sized bite, use a cookie dough baller or a tablespoon. Scoop, roll into a perfect ball and into an airtight container they go! These will save for 5 days in the fridge.

Pumpkin Spice Bites

Makes 12 bites


  • 1 cup rolled oats

  • 4 tablespoons cashew or almond butter

  • 3 tablespoons pumpkin puree

  • 2 tablespoons chia seeds

  • 2 scoops vanilla protein powder

  • 1 teaspoon pumpkin pie spice


Add all ingredients to a large bowl and stir to combine. Scoop with a cookie dough baller or tablespoon and roll into balls. Store in an airtight container in the fridge for up to five days.

Brownie Batter Bites

Allow me to introduce you to the most decadent energy bite I have ever made! Chocolate packed brownie batter bites are my favorite way to recharge after a workout or crush a persistent sweet tooth! 

The base of this bite is an old Whole30 chocolate cake recipe I had tinkered with back in October. The cake failed miserably, but removing a few ingredients made a fudgy delicious energy bite!! 

The process to make these is super simple. Stir, roll and refrigerate! I like to roll my bites in mini m&m's for fun, but crushed walnuts, coconut flakes or crushed graham crackers make excellent coatings as well! 

Be sure to keep these refrigerated as they don't hold up well to heat! 


Brownie Batter Bites

Makes 6-8 bites


  • 1 cup cashews 
  • 2 tablespoons melted coconut oil 
  • 2 tablespoons cashew butter 
  • 1 teaspoon vanilla extract 
  • 1/3 cup cocoa powder 
  • 1 cup dates, pitted and soaked in hot water for 5 minutes
  • Water as needed to thin mixture
  • Mini m&m’s to coat 


Add cashews to food processor and pulse until nuts are a super fine crumble. Add coconut oil (measure after you melt), cashew butter and cocoa powder and blend to combine. Add dates and blend until mixture is thick. Add water to thin if necessary. Use a tablespoon to portion and roll into balls. Roll in desired toppings and refrigerate. 


Almond Chocolate Chip Bites

Who can resist a chocolate chip filled, peanut buttery, almond crunchy bite? I know I can't. Especially after a hard workout or when I am craving a warm chocolate chip cookie. The beauty of these little guys is that you can sub out any nut butter you would like ( I have used cashew butter in these as well) and you can also reduce calories by eliminating the chocolate chips or rolling each bite smaller. You don't have to refrigerate these bites, so they are ideal for backpacks or hiding in your desk at work. Just don't store these bites in your car, they will most definitely melt everywhere on a hot day (that's a bit of personal experience speaking). Enjoy making these bites, but if you make them you have to bring me some. :)  

Almond Chocolate Chip Bites

Makes 15 bites


  • 1 cup rolled oats
  • 1/4 cup finely shredded coconut flakes
  • 1/4 cup chopped almonds
  • 1/4 cup mini semi-sweet chocolate chips
  • 1/4 cup dried cranberries, finely chopped  
  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 1/4 tsp almond extract


Mix all ingredients in a bowl until well blended and roll into bite sized balls ( about 1/2 tablespoon). Store in the fridge or on the counter in an airtight container. 




Cashew Coconut Fudge Bites

It’s coming….the onslaught of holiday sugary goodies and sweets. Thanksgiving is next week my friends and following that the endless holiday parties can tempt even the strongest of wills and add up quickly! This year I am fighting back by bringing a paleo approved, grain free, dairy free and gluten free treat that looks as decadent as it tastes! My cashew coconut fudge bites will satisfy even the biggest sceptic and allow you to enjoy a rich and fudgy dessert guilt free!! 

Since this delicious treat only takes a handful of ingredients to make, make a big batch and box them up to give to friends and family as a holiday gift. They also freeze well and can last for up to three months in a ziplock in your freezer! 

I do not suggest eating these regularly as a post workout recovery snack, but I have been known to sneak one after an extremely trying workout. :) 


Cashew Coconut Fudge Bites

Makes 8 bites


  • 1/4 cup unsweetened dark cocoa powder
  • 1/4 cup unsweetened shredded coconut plus extra for rolling
  • 2 tablespoons honey
  • 1 tablespoon cashew milk
  • 3 tablespoons cashew butter
  • 1/4 teaspoon vanilla extract 


Combine all ingredients in a bowl and mix with fork until combined. Measure out bites in tablespoons and roll into balls. Once shaped, roll in shredded coconut and store in an airtight container in the fridge for up to one week.
